thanks! posting "what's for dinner" really forces me to think of balanced, easy and fun meals (and holds me accountable to planning ahead!)
Secret: i ended up frying the fish in oil, tsk, tsk. but it was delish. i ALWAYS use the Golden Dip't mix. What was really fun was that Chatterbox pretty much made the fish herself. She thawed the filets in cold water, dipped them in the milk, shook them up in a ziploc with the batter - all I did was fry 'em. child labor rocks. tee hee. no, seriously, she LOVED it.
